Wild Boar Sausages - Stab One Tonight!

My thanks to the good people of Clark's Meat and Poultry for delivering to me a batch of their splendid wild boar sausages, which they make on their premises (in natural casings)

They were bloody marvellous, exceptionally flavoursome.

Rolled Loin of Sussex Pork

 

My good friend Derek Stott, who is an experienced butcher, has joined forces with Paul Clark of Clark's Meat and Poultry.

As I have said before, rather than expose yourselves to the risk of COVID19 in an overcrowded supermarket, buy produce from your local shops which are plentifully stocked and are not crowded with people standing cheek by jowl.
 
As such, I was delighted with this magnificent rolled loin of Sussex pork that Paul delivered to me on Saturday. I roasted it with stuffing and prunes.
 
It was first class, very tender and flavoursome!

Channelling My Inner Fanny - Stuffed Baked Potatoes

 


Here we go folks, a splendid winter warmer for you (shades of Fanny Craddock).

Ingredients

- baking potatoes

- grated mature cheddar

- cocktail sausages

- diced streaky bacon

- butter

- milk

- English mustard powder

- salt pepper

Method

- bake the spuds, cut them in half and scoop out the inside

- mash with milk, cheese, mustard, salt/pepper

- cook the bacon and sausages

 -combine with the mash then stuff the skins

- bake for 20 minutes at 200

Delicious!

Here is a fantastic boned, rolled shoulder of Sussex lamb that I bought from my good friend Derek Stott of D and D Family Butchers, his shop operates a strict policy of no more than one person in at any one time.

It was excellent, very tender, moist and full of flavour!

I cooked it with herb and onion stuffing, and some prunes and apple.

It was excellent, very tender, moist and full of flavour!

Here is a fantastic rolled sirloin of beef that I bought from my good friend Derek Stott of D and D Family Butchers, his shop operates a strict policy of no more than one person in at any one time.

The beef was exceptionally tender and mouthwateringly flavoursome, I served it with my special Yorkshire Pudding (cooked under the meat for extra flavour - which also means it doesn't rise).

Scallops and Bacon

 

Two of my favourite local suppliers provided me with the the ingredients for this simple starter.

The smoked back bacon came from my good chum Derek Stott of D and D Family Butchers, and the scallops (note the roe must always be attached for the best flavour) came from the good people of Sea Haze on Brighton Beach.

The bacon and scallops were fried in butter with black and white pepper, note scallops need no more than 60 seconds each side (any more than that and they will be like rubber!).

Absolutely delicious!
