The Ultimate Christmas Gravy





 

Ingredients

Giblets (from your chicken, capon or turkey) 

Bay leaf

Salt/pepper

Water

Knorr Stock Pot

Bisto chicken gravy granules

Method Christmas Eve

Add water, salt/pepper and bay leaf to giblets

Simmer for 1 hour

Drain stock and keep in fridge for Christmas day 

Feed giblets to you cat (Daisy)

Christmas Day

Bring stock to boil

Add to Knorr Stock Pot and a decent portion of gravy granules

Top up with water from Brussels Sprouts

Awesome!

Hospitality Sector Thrown Under The Bus

Yesterday's Whitty/Johnson briefing, which effectively said cut down on your socialising, threw the hospitality sector under the bus at what should be their most profitable time of the year.

Chief Medical Officer Chris Whitty last night urged Britons to scale back their social lives and not mix with people unless they have to. The public should “prioritize social interactions that really matter to them” by “de-prioritizing” more trivial social events, Whitty advised, warning this was “going to become increasingly important as we approach Christmas.” His unmistakeable takeaway: “Don’t mix with people you don’t have to.”

Boris Johnson — under pressure from his increasingly restriction-skeptic party — declined to join Whitty in giving the public a direct order to cancel events over the Christmas period. There is outcry among business leaders this morning at what they see as a worst-of-all-worlds scenario, where Brits stay home of their own accord in the coming weeks without the government providing any financial safety net for the hospitality and live events industries. 

Resolution Foundation’s Torsten Bell puts it: 

“If you’re telling people to avoid hospitality, it doesn’t matter if you’re not banning them from doing so: restaurants, pubs, bars are going to get stuffed. They’ll lose customers and workers will lose their jobs.”

We have always enjoyed our meals there.

Eva and I are regulars, and had a fantastic evening there last Saturday night. The service was very friendly and professional, and the food fantastic. 

It is well worth visiting.

Spare Ribs





 

I bought these splendid chunky spare ribs from the good people of Clark's Meat and Poultry and roasted them with my special sauce.

They were succulent, tender and sublime!

Ingredients

-garlic chopped
-ginger grated
-soy sauce
-scotch bonnet sauce
-hoi sin sauce
-honey
-lemon juice
-paprika powder
-tomato puree
-Worcestershire sauce
-olive oil
-salt/pepper

Method

-Mix the ingredients
-Coat the ribs
-Put the ribs in a roasting pan and cover with silver foil
-Roast for 1.5 hours at 160
-Remove the foil and roast for another 10 minutes or so at 180

Pavel - Brighton

 

Despite having lived in Brighton for many years, we have never tried Pavel (a hidden gem of an Indian restaurant in Kemptown).

We remedied that on Saturday night, and had a really excellent evening.

The service was friendly, cheerful and efficient.

The food was spot on, a good selection of choices and fantastic flavours, we loved it.

I even had mulligatawny soup, something I haven't had for a few years! 

Oh, and by the way, the Chablis was superb.

The Bristol Bar Brighton







 

Those of you who want a good meal, in a comfortable and relaxed atmosphere with a view of the sea should go to the Bristol Bar on Marine Parade (between Brighton pier and the marina).

To celebrate Freedom Day, and the fact that the weather was decent, we went there last night for dinner.

I am happy to recommend the Bristol. 

  • Our welcome was warm, and the staff are friendly professional and efficient.
  • The ambience is relaxed and very comfortable.
  • The menu suits all tastes, and the food was very good - tasty and well presented.

It is well worth a visit!

The Belgian Cafe Eastbourne

 








Whenever we are in Eastbourne, we always make time to visit the Belgian Cafe (11 Grand Parade 01323 729 967).

As per its website: 

"We are famous for our freshly prepared seafood specialities, including 50 different ways to enjoy mussels and our amazing selection of over 50 bottled Belgian beers. Since December 2014 we have been producing our own home-brewed beer right here on the premises called ‘Beer Me Brewery’.

Established in 1999, the Belgian Cafe (formerly Cafe Belge) is a recent winner of the local Sovereign Award for Eastbourne’s best restaurant and was nominated for the Les Routier restaurant award in 2013. We offer casual dining with exceptional service, not only the best of seafood dishes, but also a great selection of meat and poultry, salads and vegetarian options.

Our passion for food and quality drinks have always been our main drive. After years of studies, hard work and tasting, since December 2014 we are really proud to brew our own beers on site.

We select and use only the best ingredients, focusing on the purest brewing laws. Our beers are unfiltered and served fresh directly from the brewery. Our aim is to bring you a great and unique taste at the best price."

We popped in for lunch last Monday and had two bowls of mussels, and some fizz.

The food was excellent, and the warmth of our reception, professionalism of service and friendliness of staff were all top notch.

It has over 60 dishes, including paella; and a good selection of Spanish wines.

We thoroughly enjoyed the dishes we chose, I was particularly impressed with the tortilla which had a nice peppery twang to it. 

The welcome was warm and the service was very friendly and efficient, and we were even allowed to borrow an umbrella at the end of the meal to get back to our hotel as it was tipping down (we duly returned it the next morning).

The Rostick Revisited






 

Kudos and thanks to Lorenzo Cinalli and Lonela "Nelly" Pricop and the good people of the Rostick Restaurant in Eastbourne for our very warm welcome, professional friendly service and exceptional food.

It has been three years since we last went there (see review), but thanks to the none too "small" matter of the pandemic our plans to revisit were delayed until last Saturday.

We were not disappointed, it was bloody brilliant!
